How to make Spicy Squash Wot

Ingredients

  • 3 tbs Berbere Blend

  • 1 cup diced onion

  • 1/4 cup vegetable oil

  • 3 tbs olive oil

  • 2 tbs garlic & ginger paste

  • 1 tbs tomato paste

  • 1 cup diced cherry/plum tomatoes

  • 1 medium sized squash diced

  • 1 - 2 cups water

  • Salt & pepper

  • Fresh rosemary & thyme

    Optional 

      1. 1 tbs Qibbeh (butter) 

Instructions:

    1. Preheat the oven and roast the diced squash until fork-tender. This method enhances the texture and flavor of the squash.
    2. In a skillet, heat vegetable oil and olive oil over medium heat. Add diced onion and sauté until translucent.
    3. Stir in garlic and ginger paste, then add tomato paste and diced tomatoes. Cook until tomatoes break down.
    4. Add the roasted squash to the skillet and mix well with the sauce.
    5. Pour in water to reach desired consistency and season with salt, pepper, and fresh herbs.
    6. Simmer the mixture until flavors meld together and the sauce thickens.
