How to make Ethiopian Red Stew Base

Ingredients:



  1. 2 tablespoons vegetable oil
  2. 2 onions, finely chopped
  3. 4 cloves of garlic, minced
  4. 1 tablespoon grated ginger
  5. 2 tablespoons Amaarech Berbere Blend
  6. 1 teaspoon Amaarech Tikur Qimmem Blend
  7. 1 teaspoon Amaarech Mekelesha Blend
  8. 1 cup vegetable broth (divided)
  9. 1 cup tomato puree
  10. Salt, to taste

Preparation:

  1. In a large saucepan over medium heat, sauté chopped onions with a pinch of salt until translucent, approximately 5-7 minutes.
  2. Add vegetable oil and continue cooking until onions are caramelized. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Reduce heat to low and incorporate berbere and tikur qimmem spice blends into the pot. Stir thoroughly to coat the onions, garlic, and ginger. Cook for 2 minutes, stirring constantly.
  4. Gradually add splashes of vegetable broth to the pot, stirring well to create a thick paste. Cook for an additional 5 minutes to allow flavors to develop.
  5. Mix tomato puree into the pot, ensuring it combines well with the spice mixture. Cook for 2 minutes.
  6. Continue adding splashes of vegetable broth gradually, stirring well. Reduce heat to medium-low, adjust spice levels if necessary, and simmer for about 20 minutes, stirring occasionally and adding more vegetable broth as needed.
  7. Remove from heat and allow the stew base to cool before incorporating it into your desired recipes. Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.

  1. Add the mekelesha spice blend at the end of your cooking process to round out the flavors.
