Ethiopian "Tikil Gomen  with injera"

Ingredients

  • Cabbage
  • Carrots
  • Potatoes
  • Onions
  • Oil
  • Salt
  • Garlic and ginger paste
  • Turmeric
  • Nech Qimmem
  • Mekelesha
  • Fresh chili

Preparation

    1. Sauté onions in a pan with oil and a bit of salt over medium heat.
    2. Add garlic and ginger, cook for a couple of minutes, then incorporate turmeric, nech qimmem, and mekelesha. Cook for a few more minutes.
    3. Add julienned carrots, cook briefly, then introduce the potatoes. Cook for an additional 5 minutes.
    4. Add the sliced cabbage, mix everything, cover with a lid, and cook until potatoes and carrots are fork-tender.
    5. Adjust seasoning, add fresh chili, and serve as a side with injera or your choice of grain.
